Cherry Delight Recipes

The cherry is a little red fruit that is loaded with lots of nutrients and very low in calories and fat. It is a great source of vitamin C, the minerals Potassium and Magnesium. It is also rich in dietary fiber, especially the skin. Other health benefits are that it is low in saturated fats, cholesterol and sodium. Cherries also contain antioxidants known as anthocyanins. The antioxidant action helps reduce inflammation, assist in weight loss, reduce muscle damage and also act as a digestive aid.

Cherries can be consumed fresh, as juice or made into great recipes. Cherry delight recipes offer great desserts that make use of this healthy fruit. They are easy to make and do not require much time. Here are two variations. Try out both and find out which you prefer. One is a no bake recipe, the other requires baking.

Cherry Delight Recipe 1

Ingredients. 1 packet wafers (your preferred flavor), 1 cup whipping cream, 1 packet cream cheese softened, ½ cup icing sugar, 1 can cherry pie filling.

Method. First crush the wafers and put in a 9 x9 baking tin. Then whip the cream cheese in a medium bowl. Add the icing sugar slowly and continue whipping until the mixture is soft and fluffy. Once ready, spoon the cream cheese and sugar mixture over the crumbled wafer. Spread the pie filling on top and refrigerate overnight. Your cherry delight dessert is now ready to eat!

Cherry Delight Recipe 2

Ingredients. 1 cup margarine, ½ cup brown sugar, 2 cups flour, 1 cup chopped pecans, 8 oz packet cream cheese, 1 cup icing (confectioners) sugar, 1 teaspoon vanilla, 1 can cherries (or fresh cherries if available).

Method. The first step is to cream the margarine together. Then fold in the pecans. Next add the flour to make a soft but manageable dough. Line a 9 x 12 baking pan with the dough and bake for 15 – 20 min at 400ºC. Set aside to cool. In a small bowl, whip together the cream cheese, sugar and vanilla essence to form a smooth mixture. Pour into the baking tin with the crust and refrigerate for at least 3 hours, if possible overnight. Finally top up the crust and cream filling with the canned or fresh cherries and serve.
