Cherries in Cream and Chocolate Cups
1 bar (6 oz size) semi sweet chocolate, broken into small pieces
2 tbsp butter or margarine
2 tbsp light corn syrup
1 can (1Ib size) sour red cherries in water
¼ cup granulated sugar
1 tbsp lemon juice
1 drop red food color
1 cup heavy cream
2 tbsp confectioner’s sugar
¼ tsp almond extract
1 tbsp corn starch
Make chocolate cups first. Combine chocolate with butter and corn syrup in a bowl over hot water. Stir until melted and smooth. Remove from heat and keep over hot water. Cover a cookie sheet with foil, shiny side up. Spread chocolate mixture on to sheet, dividing it evenly into 6 mounds. Spread each into a 5 inch round. Place in freezer.
Prepare cherry filling.
Drain cherries, reserving ½ cup of liquid. Set cherries aside. Combine granulated sugar with corn starch. Add reserved cherry liquid, stir until smooth. Bring to the boil and stir over a medium heat. Boil for 2-3 minutes until mixture has thickened and appears translucent. Remove from heat and leave to cool slightly. Add lemon juice, cherries, and food color. Cool thoroughly.
Prepare the finished dessert.
Remove chocolate mounds from the freezer. Oil the bottom of 6 custard cups or glasses. Peel chocolate from foil and invert over glasses. Set aside at room temperature for 10 minutes. Once chocolate rounds have begun to warm up, press edges down to flute them slightly. Wait several more minutes until chocolate can be molded further and then return to freezer still molded over the cups. Whip cream from confectioner’s sugar and almond extract until stiff. Turn mixture into a large pastry bag with large star tip.
To serve, remove shells from the cups and set on individual plates, Pipe some whipped cream into each cup and spoon some of the cherry filling into the centre of the whipped cream. Serve immediately.
