1 ¼ pound of pitted bing cherries
1/2 cup cherry extract
4 cups vanilla ice cream
¾ cups sugar
¼ cup water
2 ½ tablespoons of cornstarch
½ cup of your favorite brandy
¼ of orange juice
Mix the cornstarch and sugar together in a bowl or saucepan and then stir in the water and orange juice. Once the ingredients are well mixed put over a medium heat until they boil and thicken. Next you will need to add the cherries and reduce the heat and let them simmer for around 15 minutes.
Once they have simmered remove them from the heat and add the cherry extract, stir and pour in the brandy. Then with a long lighter or match light the brandy and let it burn until it goes out. Last but not least spoon generous helping of your bing cherries jubilee over bowls of the vanilla ice cream.

CHERRIES IN THE SNOW - When it comes to cherry recipes here is another one that can't be beat. It can also be really fun to make.
1 can of cherry pie mix
1 ¾ cups of sugar
1 package of cream cheese
2 pints of whip cream
1 tablespoom of vanilla
½ cup of melted butter
25 crumbed graham crackers
1 cup of pitted and chopped cherries (sweet or tart)
Mix the butter, ½ cup of sugar and graham cracker crumbs and put in a 13 x 9 pan. Then, whip the cream cheese and add 1 ¼ cups of sugar. Mix in the vanilla and whipped cream and pour over over the graham cracker crust. Put the pie filling in a bowl and stir in the cherries. Pour filling and cherries on top and put in refrigerator until well chilled.
