Cherry salsa! Fantastically delicious on top of chicken and pork dishes, but I just love to eat it as a dip for my tortilla chips. Everyone has their own use for it, but everyone agrees what a unique and wonderful taste it has.

Someone who knew I was a cherry lover sent this to me, and I thought I would share it with you. I have already made a couple of batches and I am certain if you enjoy cherries, you will love this cherry salsa recipe.
One great thing about this recipe is it is short and sweet. You just gather your ingredients, mix them together, let them chill and there you are. That was fast wasn't it?
Okay, to make a really nice batch that will last you a few days you want to start off my chopping into very small pieces, one cup of onions, one cup of green peppers, one cup of green chiles, one cup of fresh or dried tart cherries, and one cup of cherry jam (homemade is great).
Put the above ingredients in a large bowl and add 5 tablespoons of vinegar and 5 tablespoons of cilantro. Take a few minutes make sure the vinegar and cilantro are well mixed into the other ingredients, then cover, chill for a few hours and it is ready for serving.
Another good thing about this cherry salsa recipe is you can easily make changes to fit your particular taste preferences. Some people like to add a little garlic to give it a little extra zing. I have a friend who likes her cherry salsa extra hot and spicy, and she always adds some chopped up jalapenos. You may have a special herb that you could add that might give it the flavor that is just right for your taste buds.
